Welcome to IBS Girl! I started this blog to share my own experience of living with IBS and becoming gluten free.

From working out what foods my tummy will tolerate, to packing my breakfast and lunch for work, cooking gluten-free meals, eating out and going on holiday, I'm learning as I go.

Crispy Parmesan Leeks

A quick side dish made with buttery leeks, crisp gluten-free breadcrumbs and Parmesan.

Ingredients

  • Leeks, sliced
  • Butter
  • Gluten-free breadcrumbs
  • Parmesan cheese, grated

Method

  1. Melt a little butter in a frying pan and sauté the leeks until soft.
  2. Add the gluten-free breadcrumbs and stir until they become golden and crisp.
  3. Add the grated Parmesan, stir through and serve.

Homemade Gluten-Free Breadcrumbs

A handy way to use up gluten-free bread and keep a supply of breadcrumbs ready in the freezer.

Method

  1. Break the gluten-free bread into chunks and blitz in a food processor until you have breadcrumbs.
  2. Spread the breadcrumbs evenly onto a baking tray and bake for around 20 minutes, or until dry and crispy.
  3. Allow them to cool completely, then place them in a freezer bag and store in the freezer, ready to use whenever you need them.
